Thanks, age is another factor. I want to settle down soon and consider starting a family. And that takes YEARS of financial prep. One of the things I love about my boyfriend is that he is already an amazing dad to his two kids, and I've grown a great relationship with them, but with his finances (their mom is the same way he is) another concern is them asking me to cover their needs in the future. When their mom learned that we might move in together in the house that I own she's already asked if he could live rent free in order to increase child support payments, which would basically mean I'd be paying it, so the answer was no.
That would be completely cruel and selfish. You’d be stringing her along for months, wasting her time.

The only plausible innocent explanation I could come up with is if he took her off the payroll and is paying her under the table now. Though it wouldn't really explain why coworkers haven't seen her in a month. Maybe she's doing more freelance work for whatever the company is now?

He’s acting like she did something to him or betrayed him.
She might not even remember what that other guy looks like. If he acts now like she was in any way “his” at the time, then he’ll fuck it up on his own. She hasn’t done anything to perplexed about. He needs to own his immature jealousy within himself and keep on keeping on and maybe she’d like to commit to something at some point but she certainly hadn’t that night. At this stage it’s not even close to the kind of thing you make a big deal about at all.

How much consideration does she give to her nutrient intake? Vegan diets make it hard to get protein and fats. One idea is to look at different foods and meals for a healthy vegan diet. Beans and other legumes have protein, and avocados have healthy fats. One danger of a vegan diet is having too many carbs. Sugars, starches, grains are all carbs, and give quick energy, and when we have more than our bodies can use, the extra carbs are turned to fat and stored for energy.
As for talking about it, don’t. Unless she brings it up. But it might work to say you have some recipes to try. Any talking you do should have more listening to her. If she asks what you think, I suggest focusing your words around care and concern for her health and well being.
