Unfortunately I’d agree that it is less realistic, unless you find a partner who also has a schedule that works like yours does. However, that does not only mean working in your field. I totally understand wanting someone with the same lifestyle as you, I would just highly recommend expanding your search to include men in other careers.

What has she said when you've asked her 'why' she isn't interested in sex any more? Because we can't really answer you without her reasons. You'll get a lot of “leave her” responses, and it's fine if that's what you want to do. But if you don't, and you want a solution, we have to know what she says is going on.
She could have mental health issues, she could have physical health issues, she could have hormonal issues, she could just be closer to asexual, or this could be the amount of sex she wants. Some of those things are resolveable, some of them can be worked on over time, and some of them aren't something you can push your sexual wants or needs over hers on.
So the only answer I can give, the only really reasonable response without more info, is to ask her why she doesn't want more sex and isn't working on the problem, try and work on solutions to the why if it's something that can be worked on, and if it's not, let her go because your wants/needs don't align.
