I mean this is not at all uncommong, maybe the degree is a bit more extreme, but it sounds like a very common issue in relationships.
Maybe it's a backwards take but she should just respect what you tell her. “Don't touch my shit, end of story.”, “Leave it where it is.” If she claims it's due to some kind of disorder, tell her to get it treated. Otherwise if she refuses to stop I'd just start throwing her stuff around in places where she can't find it and see how she enjoys that.
