If you have any debt whatsoever I would use this money to pay that off. You'll get much more bang for your buck. Let your girlfriend know that her gift allowed you to get one step closer to financial freedom. If you have no debt use the money to pursue a better financial situation for yourself. You said your barely scraping by so that means you might need a certification or some way to get a better career. These things will benefit you much more than an interest bearing account. As someone who has given gifts like this I get high satisfaction when I know the person uplifted their life with it.
